SITXFSA001 Use hygienic practices for food safety and SITXFSA002 Participate in safe food handling practices , from the Tourism, Travel and Hospitality Training Package SIT16 describes the performance outcomes, skills and knowledge required to handle food safely during the storage, preparation, display, service and disposal of food. It requires the ability to follow predetermined procedures as outlined in a food safety program. The course also includes the updated knowledge required by the NSW Food Authority to cover the topics Safe Egg Handling, Allergen Management and Cleaning and Sanitising in more detail, a requirement from 1 September 2015. This NSW FSS training course is recognised under the VET Quality Framework, ASQA & the NSW Food Authority.
Before You Book
The course is in English & assessed in English, you have the following Foundation Skils to take part & successfully complete the course:
- Reading skills: You are able to read & interpret food safety programs, policies, procedures & flow charts indentifying critical control points
- Writing skills: You are able to complete documentation for monitoring food safety
- Numeracy skills: You are able to calibrate & use a temperature probe & calculate timings
- Planning & organising skills: You are able to to coordinate different food handling tasks to take account of food safety issues

After Your Course
Upon the successful completion of this NSW FSS course, participants receive a Statement of Attainment from ATS. Students will also receive the NSW Food Safety Supervisor certificate issued by the NSW Food Authority to comply with new regulations. This certificate must be registered by the individual with the NSW Food Authority and local council when issued.

The NSW Food Safety Supervisor (FSS) course is made up of two units of competency: SITXFSA001 Use hygienic practices for food safety and SITXFSA002 Participate in safe food handling practices. This course is designed for supervisors and managers of food businesses in NSW. The Food Act 2003 (NSW) requires certain food businesses in the NSW hospitality and retail food service sector to have at least one trained Food Safety Supervisor (FSS). The NSW Food Authority introduced this course to help reduce food borne illness in the hospitality and retail food service sectors in NSW and to improve food handler skills and knowledge. The NSW FSS Online course involves working through the course material online, in preparation for the assessment tasks. To be eligible for the NSW FSS Online course, you must be working in the industry and have access to a commercial kitchen. There are workplace assessment tasks which must be completed in a commercial kitchen. If you do not meet these requirements, you will need to complete a NSW FSS classroom course. How is the Course Assessed?
Online exam consisting of short answer, multiple choice and true or false questions and four workplace assessments (must complete in commercial kitchen & should not take more than an hour). Students have achieve a mark of 95% or higher to be deemed Competent.
