Use hygienic practices for food safety SITXFSA001 from the Tourism, Travel and Hospitality Training Package SIT16. This Food Hygiene training course is recognised under the VET Quality Framework, ASQA & the NSW Food Authority. This unit describes the performance outcomes, skills and knowledge required to use personal hygiene practices to prevent contamination of food that might cause food-borne illnesses. It requires the ability to follow predetermined organisational procedures and to identify and control food hazards.
Before You Book
Foundation skills essential but not explicit to performance in this unit include the following:
- Reading skills: Interpret organisational documents or diagrams relating to food safety programs, hygiene & food safety procedures & hazard analysis & critical control points (HACCP) practices
- Oral communication skills: Report hygiene hazards & non-compliant organisational practices accurately

How is the Course Assessed?
Online exam consisting of short answer, multiple choice and true or false questions and two workplace assessments (must complete in commercial kitchen). Students must achieve a mark of 95% or higher.
